What is the appropriate film camera settings for sunny weather? What would be your safest bet? I’m working with a film camera (Nikon FE2) and I’m rather inexperienced. Any help would be great!

It depends on the lens you are using. But start at 100 or 200 ISO and then f11 and 1/250th shutter speed. If you get into really sunny spots like a beach etc with heavy reflection you will have to speed the shutter to 1/500th or faster.
